The local church has a very popular series of summer concerts for which the village ladies provide tea and cakes. I bake two cakes for the concerts and this week I wanted to try something new, so here is Ginger Cake no.1. I can’t show you the inside but it looks quite nice from the outside, don’t you think? The recipe is Delia Smith at http://www.deliaonline.com/recipes/cuisine/european/english/preserved-ginger-cake-with-lemon-icing.html with some changes: I used
- 2 teaspoons dry ginger
- 1 heaped dessertspoon of grated fresh ginger
- Desiccated coconut instead of ground almonds because I didn’t have any almonds
- Icing made of icing sugar, lemon juice, lemon zest, melted butter, and double cream
It was moist and yummy, with a genteel, elegant flavour of ginger!
