I don’t own this book, and I have not read it, yet. It is here because Shirley O Corriher cites Sherry Yard’s rule of thumb guidelines for making Chocolate Ganache.
This is the first I know of Sherry Yard, but clearly she is a guru in America – why don’t we hear of these people in the UK?
