Chocolate Cornflake Crunchies

These Chocolate Cornflake Crunchies were made for a family event in a village and the recipe was adapted from BBC Good Food

150 g butter
300 g dark chocolate
9 tablespoons golden syrup (yes, the dark chocolate really needs this!)
300 g cornflakes (I used a mix of bran flakes and cornflakes)
a handful of chopped walnuts
a handful of sultanas marinaded in a tablespoon of brandy

  • Combine the butter, broken up chocolate and golden syrup in a bowl and heat in the microwave on a medium heat until the mixture starts melting. Remove from heat and stir until all the ingredients are melted and combined. Allow to cool.
  • Pour the melted chocolate over the cornflakes and combine thoroughly but carefully.
  • Spoon into cupcake cases which stand in a cupcake tin – this keeps the shape of the crunchies – and allow to set in a cool place, or the fridge if unavoidable.
