Dan Lepard is a fantastic baker and today I tried his recipe for Victoria Sponge Cake. Beautiful!
I baked two cakes for the Concerts at Cratfield. I filled the cakes with raspberry jam and topped with icing sugar. WARNING – if you are baking for a competition or anything to do with the WI the ONLY acceptable topping is caster sugar – never, never icing sugar and absolutely no cream.
